Chicken and sweet leek pie with cream cheese pastry

Today has been heavenly. I haven’t had a day to myself in what feels like forever! Also, I’m getting over a rotten head cold, so it’s been so good just relaxing at home (and having an epic lie in). I did pop up to Archie’s bench this afternoon with a bunch of orange and yellow roses, and sat in the winter sun for a bit, which was lovely. It’s such a beautiful peaceful spot, I love it there. Even though it is in the heart of busy London, you can still hear the birds and it is so surprisingly peaceful. It has been a truly gentle day.

Part of my ‘me’ day involved making a pie. Because I fancied a pie and because it is one of the most rewarding things to make. Slow cooked sweet leeks and with chicken and thyme and a gorgeous cream cheese pastry to top it with. It feels fitting with the head cold and wintery sunshine. Leek, mushroom and parmesan soup

A very simple food focused post here. It’s been a busy few weeks, I haven’t eaten very well and as a result been feeling a bit run down (I haven’t had a nutribullet for at least 2 weeks!  There is a severe lack of green in my life). However it’s Friday evening, I’m on my own and just want to curl up on the sofa and unwind. Cue – my favourite meal in a bowl. Soup. This simple and flavoursome soup takes hardly any time at all and really is pure comfort in a bowl.

Maple and Caramelised Pancetta Crepe Cake

HAPPY PANCAKE DAY!

I’m a big fan of pancake day, of everything it stands for and the pancakes themselves. Shrove Tuesday came about as a way to use up all the fats and dairy before Ash Wednesday, when people would traditionally start their fast for lent. I do try and give up something every year for lent, however last year I was pregnant so it seemed mean and unfair to deprive myself! I knew if I couldn’t have something I’d just crave it more. This year however I do want to give something up. It’s hard as I’m not a huge chocolate eater (obvious choice), or drinker, so I’m not sure what to do. I’ve given up cheese before, that was hard (I should probably do it again). My other weakness is caffeine, so maybe this year I’ll do that, give up coffee for lent?! I feel sorry for Pete… this is going to be worse for him than me I fear. I’ll keep you posted.

Tonight we have a few friends coming over for pancakes and to be honest I’m keeping it old school. Lemon and sugar, and some savoury cheesy ones (with spinach and ham). However last spring I made this bad boy for a Jamie Magazine feature, and it went down a storm. So if you fancy something a little different this pancake day (or any day) give it a whirl. I promise it won’t disappoint.
